The problem is not science being unreliable. The problem is the media taking one experiment and running wild with conclusions.

In any one experiment, there are lots of caveats - in studies like these, selection bias is one of the most predominant, because you can't just select a random group of parents and force some of them to give their kids screen time. You have to look at a group of parents that have given their kids varying amounts of screen time, and then try to figure out if they're lying/self deceiving, and then try to control for other effects (like number of other kids, income bracket, diet, etc.)

The media has a long history of taking things out of proportion, most damningly with diet/food studies.

Thankfully, there is a relatively recent movement in science (particularly in psychology) to subject study results to reproducibility.
