Like Ricettas-- way overrated. Way too expensive.. Christ, it's pizza, not art.
The flatbread company you speak of works with one of the "originators" of the food I believe, based in Vermont. They "franchise" their recipes and products as well as the design of the cooking oven. After years of eating their pizza at The Big E, I am hooked and the Vermonters have inspired me to construct a wood fired dome oven in my back yard. It is a great way to cook all sorts of things.
Give me two years and I'll report back on the progress.

Admittedly, such ovens are a great way to cook; the basic design is as old as time. But I fear the Particulate Police would be on your doorstep before you could turn around three times.
